Yield: 1 pound
- 1 ¼ cups sesame seeds
- 2 cups sugar
- 1 teaspoon vanilla
- Butter a baking sheet; set aside. Use butter or margarine — don't use the non-stick spray for this job.
- In a large, heavy skillet over medium heat, cook the sesame seeds, stirring often until they begin to brown. This should take about 6 to 8 minutes. Remove immediately to a small bowl.
- Pour the sugar into the skillet and add 2 tablespoons water. Cook on low heat, stirring constantly until sugar is completely melted, approximately 8 to 10 minutes. Stir in sesame seeds and vanilla. Immediately pour onto your buttered baking sheet and with a spatula, smooth out to about 1/8 inch thick.
- Allow to cool for on the baking sheet for at least 20 minutes. Break into pieces; store in an airtight container.
Chef’s Tips: This recipe lends itself well to being creative. If you like things a bit spicy, add a bit of cayenne pepper. If you prefer almond or lemon flavors, use that in place of the vanilla. If you want to add some peanuts or other nuts, throw in a couple of handfuls. Just keep playing with this recipe and come up with your own versions.
