Quick Fix for Late Night or Time Tight!

A late night meal that fills you up without filling out your waistline!

Its 11pm,and your stomach is saying, hey that warmed up dinner we had at 5 is not cutting it. Whats to eat??? I recently started working a second shift job,and learned very quickly that the salad I ate at 6 would not hold me till breakfast the following day. Luckily a friend talked me off the ledge from eating late nite pizzas and burritos. The simple solution was...Eggs! And being that I was/am still in the middle of trying to lose the weight I'd sabotaged myself with from Thanksgiving till New Years, it had to be healthy and low calorie. My very favorite version of this is The Spinach Egg omelet. But- it it is made easy by using every ones favorite kitchen tool- the microwave.

 

2 eggs,1 handful fresh spinach leaves,1 shallow soup bowl, or glass plate.1/8 cup any cheese.Tabasco (optional).1 paper plate for covering Crack eggs and scramble in the shallow bowl put spinach leaves on top.You can put the cheese too, at this point . No butter, oil or spreads, the moisture from covering the dish and the spinach will do. I usually just sprinkle the cheese on right after I cook it. Cook for 2 minutes,covered. Sprinkle with Tabasco to taste, or if you are not a Tabasco fan try a sprinkle of Mrs. Dash no salt seasonings or just pepper.
