Look no further! Remember those amazing Coconut Butter Blondies? Well, I had some Medjool dates leftover, and needed to whip up a quick appetizer for a guest last night. Meet my new best friends- Bacon Wrapped, nut stuffed, buttery Medjool dates.
If you haven’t yet had Medjool dates, they’re popular in the Paleo world because they are a natural sugar alternative. They are naturally high in potassium (more than a banana!) and rich in fiber and B vitamins.

Bacon Wrapped Dates {Paleo}
Ingredients
10 Medjool dates, pits removed
5 slices bacon, cut in half
1/3 cup cashews, chopped
Directions
Preheat broiler. Spoon some of the cashews into the center of the date. Wrap bacon strips around dates and secure with toothpick and place on a rimmed baking sheet. Place in oven and cook 5 minutes, turn and cook another 5 minutes so that they cook evenly and drain well. Serve warm and enjoy!
