Green Chile Egg Burrito Spices Up Breakfast

I try to have a protein-packed option ready each morning, especially one that's easy to eat on the go.

I’m always looking for ways to spice up the normal breakfast foods. Although I’m not very good about eating breakfast, the husband cannot function without it.
 
To ensure that he eats a healthy breakfast, I try to have a protein-packed option ready each morning, especially one that’s easy to eat on the go. This week, I decided to mix up our usual scrambled eggs, by adding green chiles and cheddar.

Green Chiles-rich in vitamins A and C, contain high amounts of the antioxidant beta-carotene, which supports the cardiovascular system, as well as helps maintain the health of the skin, eyes and immune system. Also a good source of iron and potassium.

Give these breakfast burritos a try! You can even make up a few ahead of time and pop in the fridge, then reheat on your way out the door in the morning!

Green Chile Breakfast Burrito

Ingredients
3 eggs, beaten
1 tablespoon green chilies, diced
1/4 cup shredded cheddar cheese
2 whole wheat tortillas
sea salt and pepper

Directions
Heat a non-stick skillet over medium-high heat. Add in beaten eggs, and continue scrambling as they cook. When the eggs are almost done, add in green chiles, cheddar cheese, and season to taste with salt and pepper. Remove from heat and distribute egg mixture between two tortillas. Roll up as burritos and enjoy!
