Mini Frittatas: Protein-Packed Breakfasts That Take Just Minutes to Prepare
I know from experience that unless you plan and prepare to eat healthy, you absolutely won't.
In eating low-carb, paleo “ish,” the hardest meal of the day for me is often breakfast. This may be because there’s only really one “breakfast” food, that is low-carb and a whole food: the egg.
In striving to eat low-carb/grain free, its hard to find breakfast foods that don’t revolve around eggs. But then, I read this interesting paleo article reminding me that for breakfast, we don’t have to eat breakfast foods. We just need to eat.
So while, I’ve been grabbing whatever foods I can find in the mornings for breakfast, this week I decided to get serious about eating clean and feeling good again. We are going to Jamaica for a wedding in a little over a month after all. Bikini will be necessary.
But, whipping up scrambled eggs on a work morning isn’t something I always have time to do. My solution? Pre-baked mini frittatas, ready to be grabbed and devoured on the go.

I know from experience that unless you plan and prepare to eat healthy, you absolutely won’t. So do it. These take minutes to whip up, and provide a yummy, protein packed breakfast for your whole week.
What are frittatas you ask? They are basically an open-faced omelet or something like a crustless quiche. For this recipe, I make them in individual muffin pans for easy, individual servings. You can basically add any ingredients that you ike, just as you would in an omelet. I opted for turkey bacon, feta, and spinach because it’s what I had:)

Mini Frittatas
Ingredients
- 7 eggs
- 1/3 cup milk
- ½ medium onion, diced
- 5 slices turkey bacon, chopped
- 1/3 cup feta cheese
- 1 cup spinach, chopped
- Pinch of salt
- Pepper
Directions
Preheat oven to 350 and spray muffin tin with non-stick cooking spray. Heat a skillet over medium-high heat, add bacon and onion and cook until bacon begins to brown.
Add in chopped spinach, and cook until just wilted. Remove from heat and set aside.
In a bowl, beat eggs with milk and add feta cheese. Once spinach mixture has cooled, stir into beaten eggs.
Pour into individul cups in a muffin pan, filling 2/3 of the way full. Bake 25-30 minutes until center is firm. Enjoy!
